- You need 1 kg of lean beef fillet.
- It's 3 tbls of soy sauce.
- Prepare 2 (6 inch) of lemongrass stalks chopped into small pieces (the white part).
- It's 1 inch of fresh ginger.
- Prepare 3 of garlic cloves.
- You need 1 of medium red onion.
- It's 1 of scallion.
- You need 2 tbls of brown sugar.
- Prepare 1 tbls of red chilli flakes.
- You need 1 tbls of lemon juice.
- Prepare 1 tbls of fish sauce.
- It's 2 tbls of olive oil.

- Cut the fillet in small steaks and set aside.
- In a food processor or blender mix all the above ingredients except for the beef and whizz until lemon grass is well blend with the other ingredients.
- Marinate the beef in the lemongrass marinade for no less than 30 minutes. The more time the better.
- Using a grill pan over high heat, heat up 2 tbls of vegetable oil and sear cook the beef to your liking. Pour the leftover marinade a minute before removing the beef from the heat. The extra marinade will make the beef juicier when serving..
