Ingredients of Pumpkin sambar

  1. You need 1 bowl of Pumpkin.
  2. You need of Cocunut cut pieces 3/4 th cup.
  3. Prepare of Red chillies -3 nos or sambar powder -2tbsp.
  4. Prepare of Coriander seeds 1tbsp/coriander powder 1.5 tbsp.
  5. You need of Tomatoes 2 nos.
  6. It's 1/2 cup of Thoor dal.
  7. You need of Jeera 1tbsp,jaggery -1 cube or 2tbsp of sugar.
  8. It's 1/2 tbsp of red chilli powder.

Yellow pumpkin is called as manjal poosanikai in Tamil. This sambar is a staple in my house. Pumpkin/Poosanikai/Arasanikai/Manjal poosani Sambar is a nutritious and delicious treat. One of the best ways to use Halloween pumpkin.

Pumpkin sambar instructions

  1. In a pressure cooker add pumpkin and thoor dal, 1 cup of water and let them cook upto 3 whistles.
  2. Take a pan add 3tbsp of oil,jeera seeds,tomatoes cut into medium pieces,coconut and let it cook for 3 min in medium flame.
  3. Add turmeric powder,Red chillies or sambar powder,coriander seeds/ coriander powder and cook for 3 mins with 1/4 th cup of water.
  4. Turn off the flame and let the mixture cool down to room temperature.
  5. Take a blender/ mixer grind the mixtture into fine paste. Note: half of the pumpkin along with thoor dal can be grind together with this mixture to increase the volume and maintain the consistency.
  6. Pour the mixture in the same pan add the rest of the pumkins and once starts boiling turn off the flame and serve hot.
  7. Delicious sambar ready to serve with hor rice,dosa,idly..
