Karnataka Khara Bhath (Upma) instructions
- Heat a kadhai or large bottomed pan. Add oil and heat. Add Mustard seeds and splutter them. Then add the lentils, hing, curry leaves, ginger and mix well..
- Add onions, along with a pinch of salt and cook them well. When they turn aromatic, add the capsicums, carrots, peas and add 1/2 cup hot water and cook them covered till soft. You can add any other vegetables of your choice. Then add tomatoes and cook them for a minute..
- Then add 6 cups water and let it boil. Add chilli powder and salt. When water starts boiling, slowly add the roasted semolina and keep mixing with a perforated spoon with other hand. Make sure that there are no lumps..
- As the semolina soaks water and cooks, you can add more if needed till the Upma becomes soft and porridge like. Lastly add fresh coconut and mix. Then add the ghee from sides, stir well and switch off flame. Keep covered for 5 minutes..
- After 5 minutes, serve the Upma with coconut chutney or vegetable stew. Also it can be topped with spicy sev and served with curd. Enjoy..
